Albanian Fried Meatballs (Qofte të Fërguara)
Qofte të fërguara are Albanian fried meatballs, flattened into thick patties and seasoned with feta, mint and oregano. The soaked bread keeps the meat tender, while the grated onion and chopped feta add moisture and a salty tang to each bite. A dusting of flour before frying gives a light crust. They suit a simple family dinner and go well with mashed potatoes or fries.
Instructions
Soak the slice of stale bread in water, then squeeze it hard in your hands until it stops dripping.
Put the squeezed bread in a large bowl with the ground meat, bread crumbs, oil or melted butter, grated onion, feta, parsley, salt, pepper and mint. Mix thoroughly until the seasonings and cheese are evenly spread through the meat.
Shape the mixture into patties about 1 inch thick. Sprinkle the outside of each one with salt, pepper and oregano.
Roll each patty in the flour so it is lightly coated all over. Fry in hot oil until cooked through and browned on the outside.
Serve while still hot, with French fries or mashed potatoes.
