Angels on Horseback (Bacon-wrapped Oysters)
Angels on horseback are oysters wrapped in bacon and broiled until the bacon turns crisp. The dish is a classic of British savory courses and canapés, and it works because the salty, smoky pork flatters the soft, briny oyster. This version adds a short soak in dry white wine with garlic, which seasons the oysters before they meet the heat. Lean bacon crisps more cleanly in the short cooking time.
Instructions
Stir the white wine, minced garlic, salt and pepper together in a bowl. Add the shucked oysters and leave them to marinate for 10 to 20 minutes.
Preheat the broiler while the oysters sit.
Cut each slice of bacon in half. Wrap one piece around each oyster and secure it with a toothpick.
Broil the wrapped oysters, turning them so both sides cook, until the bacon is crisp. You can also cook them on an outdoor grill or a rangetop grill.
