Apple Crusted Ham

Apple Crusted Ham dresses a ready-cooked city ham in a sweet, spiced coating made from dried apples and a spice rub. The method is simple. A first hour in a low oven warms the meat, then a cola brush gives the rub and minced apples something to cling to. Cola adds sugar and a faint caramel note, so the crust turns dark and sticky during the long second bake.

Instructions

Set the ham in a large roasting pan with its larger cut side down.

Bake the ham at 250°F for 1 hour, until it is heated through and starting to dry slightly on the surface.

Take the pan out of the oven and brush the ham generously all over with the cola. The sticky surface will hold the crust in place.

Pat the Chop Rub onto the glazed ham, then pat the finely minced dried apples over the rub so they form an even layer.

Return the ham to the oven and bake at 250°F for another 1½ hours, until the crust looks set and deeply colored.

Remove the ham and let it rest for 10 minutes. Slice it thinly and serve.
