Atropellado de Coco (Coconut and Sweet Potato Dessert)
Atropellado de coco is a Yucatecan sweet made from just five pantry ingredients, and it needs no oven for the final shaping. Mashed sweet potato gives the dough its soft body and natural sweetness, while a cinnamon syrup binds it together. Ground coconut stiffens the mix until it can be rolled by hand. It is an easy way to try a traditional regional dessert.
Instructions
Bake or steam the sweet potato until it is soft all the way through, then mash it until no lumps remain.
Put the sugar, cinnamon and water in a pan over medium-low heat. Stir until the sugar dissolves and the liquid turns into a syrup.
Combine the sweet potato mash with the sugar syrup and stir until the mixture is evenly blended.
Mix in the ground coconut a little at a time until the mixture holds together as a dough you can shape by hand.
Form the dough into balls or other shapes and serve.
