Pasta with Vegetables
This is a one-pot spaghetti that cooks the vegetables in the same water as the pasta, so there is only a single pot and a colander to wash. Tomatoes and cucumber go in for the last five minutes, while raw onion is stirred in at the end for a sharp crunch. Pasta sauce or plain ketchup finishes it, which makes it a practical dinner for two on a thin budget.
Instructions
Pour 2 liters of water into a large pot, add the salt, and bring it to a boil.
Add the spaghetti to the boiling water and cook it for 4 minutes.
Stir the chopped tomatoes and cucumber into the pot with the pasta. Keep boiling for another 5 minutes, until the spaghetti is tender and the vegetables have softened.
Drain everything in a colander and return it to the pot. Stir in the butter or oil until it melts and coats the pasta, then mix in the chopped raw onion.
Stir in the pasta sauce or ketchup, starting with 3 tablespoons and adding more to taste. Serve right away.
