Baked Brie in puff pastry is a simple party starter that needs only five ingredients and one sheet of dough. Removing the rind and letting the cheese come to room temperature means it melts evenly in a short bake. The egg wash seals the parcel and browns the pastry, and a 10 minute rest keeps the center soft without running everywhere when you cut it.

Instructions

Set the block of Brie, with its rind already removed and the cheese at room temperature, in the middle of the thawed puff pastry sheet.

Trim about ½ inch off the pastry, then fold the pastry up and over the cheese. Brush the last fold with beaten egg so the edges stick together and seal the parcel.

Brush the top of the pastry with more beaten egg. Bake at 375 °F for 15 minutes.

Let the Brie cool for 10 minutes before serving, so the melted center settles and holds together when cut.

To reheat leftovers, wrap them in an aluminum foil pouch and warm in a 200 °F oven.
