Baked Lamb and Yogurt (Tavë Kosi)
Tavë kosi is an Albanian baked dish of lamb and rice under a set yogurt custard. The sauce is the point: yogurt is whisked with eggs and thickened with a flour and butter paste, so it bakes into a soft, tangy blanket instead of splitting in the oven. The rice goes in when the lamb is half cooked and finishes in the juices, so a single pan gives you meat, starch and sauce together.
Instructions
Cut the lamb into 4 serving pieces and season each one with salt and pepper. Place them in a baking pan with half of the first batch of butter.
Bake the lamb in a moderate oven, spooning the pan juices over the meat every so often to keep it moist.
When the meat is about half cooked, scatter the rice into the pan. Take the pan out of the oven and set it aside while you make the yogurt sauce.
Cook the flour in the second batch of butter in a pan, stirring until the two are thoroughly combined.
In a bowl, whisk the yogurt with salt, pepper and the eggs until the mixture is completely smooth. Stir in the flour and butter mixture.
Pour the yogurt sauce into the baking pan and stir it around the lamb pieces so everything is coated.
Bake at 375°F (190°C) for about 45 minutes. Serve hot.
