Basic Flapjacks
Basic flapjacks are the British oat bar in its simplest form, made from just four ingredients and no fruit. Melting the butter with brown sugar and golden syrup gives a sticky, caramel-toned binder that holds the rolled oats together once cooled. Cutting the slab while it is still warm gives clean edges, and waiting until it is cold keeps the bars from crumbling. They pack well for lunches, and melted chocolate suits them for dipping.
Instructions
Preheat the oven to 150°C (300°F or Gas Mark 2). Lightly grease a 7½-inch (19 cm) square baking tin.
Put the sugar, butter and golden syrup in a medium saucepan and heat until the butter has completely melted and the mixture is smooth.
Take the pan off the heat and stir in the oats until every flake is coated.
Tip the mixture into the prepared tin and press it out firmly over the base so it forms an even layer.
Bake in the centre of the oven for 40 minutes.
Leave the flapjacks to cool in the tin for 10 to 15 minutes, then cut them into oblong bars while they are still slightly warm.
Let the bars cool until completely cold before lifting them out of the tin. Store them in an airtight container.
