Nkwobi (Nigerian Spicy Cow Foot)

Nkwobi is a Nigerian dish of tender cow foot coated in a thick, spicy palm oil sauce. The sauce gets its body from potash, which is dissolved in water and whisked into the palm oil until it turns thick and yellow. Crayfish, Cameroon pepper and optional ugba add depth, while raw onion and bitter utazi leaves finish the bowl. It is often ordered in restaurants, but it is simple to make at home.
Instructions
Cut the cow feet into small pieces and remove all the larger bones.
Put the pieces in a pot with the salt, seasoning cubes and chopped onion. Pour in just enough water to cover the meat.
Simmer until the meat is tender, topping up with small splashes of water if the pot runs dry. By the time the meat is done, there should be little or no liquid left in the pot.
If you are using ugba, boil it in a separate pot for 3 minutes, then drain it.
Dissolve the potash in a cup of water and strain the liquid into a clean pot. Add the palm oil and stir well until the mixture turns thick and yellow.
Stir the ground crayfish, boiled ugba, Cameroon pepper, a seasoning cube and salt into the palm oil mixture. The recipe's ingredient list also includes garlic powder and ground ginger, which belong in this spiced base.
Add the cooked cow feet and stir until every piece is coated in the sauce.
Serve in a wooden bowl, topped with round-cut onions and sliced utazi leaves.
