Beef Skewers with Baguette Slices

These grilled beef skewers are shaped from a seasoned mince-style mixture and served with crusty baguette and fresh tomato. Soaked day-old bread keeps the meat tender, while softened shallots, garlic and chile add flavor throughout. The skewers cook quickly over a hot grill and pick up a golden crust. They are easy to prepare in a batch, which suits a casual gathering with friends and family where everyone eats with their hands.

Instructions

Soak the stale bread roll in lukewarm water until soft, then squeeze it well so no excess liquid is left.

Halve the chile peppers lengthwise, scrape out the seeds and chop the flesh finely.

Warm a little of the olive oil in a pan and cook the shallots and garlic until they turn translucent. Stir in the parsley and chile, mix briefly and take the pan off the heat.

Tip the cooked mixture into the beef, then work in the eggs and the squeezed bread. Season with salt and cayenne to taste.

Shape the mixture into small oblong balls and thread them onto wooden skewers.

Brush the skewers with the remaining oil and cook them on a hot grill, turning often, until golden brown on every side.

Rinse the tomatoes, remove any stems and slice them. Cut the baguettes along their length into pieces 8 to 10 cm long.

Serve the hot skewers with the baguette pieces and sliced tomatoes alongside.
