Tanfiri (Nigerian Groundnut and Corn Snack)
Tanfiri is a northern Nigerian snack of ground corn and groundnuts rolled into soft balls that melt in the mouth. It needs no cooking at all, only a blender and your hands. Cloves add warmth, sugar gives gentle sweetness, and a little chile is there if you want heat. Often called donkwa, it is a favorite with children and a common party starter in the north.
Instructions
Sieve the cornmeal to remove any grit or impurities. Put it in a blender or grinder with the groundnuts, sugar, ground cloves and the ground chile pepper if you are using it.
Grind everything together until you have a fine, even powder with no visible pieces of nut. Tip the powder into a large bowl.
Add the oil and water a little at a time, mixing after each addition. Stop when the mixture holds together as a dough that is neither crumbly nor sticky.
Pinch off pieces of dough and roll them between your palms into small balls. Serve them as they are, with no cooking needed.
