Beef with Suya Sauce

Beef with suya sauce takes the smoky, spiced character of Nigerian suya and turns it into a saucy dish for the pot. Instead of eating the grilled beef on its own, you simmer it in a fried base of habanero, onion and tomato, finished with garlic and ginger powder. Frying the tomato paste first deepens the sauce. It comes together quickly and suits rice, yam or pasta.

Instructions

Blend the habanero pepper, onions and fresh tomatoes together until you have a smooth paste.

Heat the groundnut oil in a pot over medium heat. Add the tomato paste and fry it for about 3 minutes.

Pour in the blended pepper, onion and tomato mixture. Keep frying for about 10 minutes.

Stir in the seasoning cube, garlic powder and ginger powder, then add salt to taste.

Add the suya beef and the diced green bell pepper. Cook for another 3 minutes, then take the pot off the heat.

Serve hot with white rice, boiled yam, spaghetti or macaroni.
