Hilda rolls are German sandwich cookies of crisp shortbread-style dough filled with jam. The name Hildabrötchen is the one you will see in German bakeries, and the cookies are close cousins of Linzer cookies. Vanilla sugar gives the buttery dough its fragrance, and the thin sugar icing on top adds a light sweet crust. The cutout in each lid lets the jam show, so a small spoonful of a bright fruit jam does the decorating.

Instructions

Put the sifted flour, butter, granulated sugar, vanilla sugar and egg together and knead until they come together as a smooth dough. Chill the dough for a while so it firms up and is easier to roll.

Roll the dough out to about ¼ cm thick. Cut round cookies from it, then cut a small shape out of the center of half of them. These ringed cookies will be the tops.

Arrange all the cookies on a greased tray. Bake at 150°C for about 20 minutes, then let them cool completely before you handle them.

Stir the powdered sugar and water together until the icing is smooth. Dip one face of each cutout cookie into the icing so it is coated, and let any excess drip off.

Spread a little jam on each of the whole cookies. Set an iced cutout cookie on top of each one, so the jam shows through the opening.
