Blackberry Mush
Blackberry mush is a four-ingredient fruit sauce that takes about fifteen minutes and needs only one pan. The cornstarch sets the cooked berries into a spoonable texture, so the same batch works two ways: poured hot over ice cream, or cooled and spread like jam. The method comes from the public domain Household Cyclopedia, and the Wikibooks notes say raspberries, plums, blueberries and peaches can be cooked the same way.
Instructions
Put the blackberries in a saucepan.
Add the sugar, cornstarch and water. Mash everything together with a fork or potato masher until the berries break down into a pulp.
Set the pan over heat and bring it to a simmer or a boil, leaving it uncovered so the moisture can cook off. Keep cooking until the mixture has thickened and reduced to the consistency you like.
Serve it hot over ice cream, or let it cool and use it as a jam.
