Smore (Eurasian Beef Stew)
Smore is a Eurasian beef stew that has nothing to do with the toasted marshmallow dessert of the same spelling. Beef shank is marinated with bicarbonate of soda, vinegar and dark soya sauce, which helps the tough cut turn tender in the pot. A whole stick of cinnamon and plenty of fried onion and garlic give the gravy a warm, savory depth, and potatoes and carrots make it a full meal.
Instructions
Wash the beef shank and cut it into chunks about 2.5 cm across. Drain the pieces in a colander.
Toss the beef with the bicarbonate of soda, pepper, salt, sugar, vinegar and dark soya sauce. Leave it to marinate for 30 minutes.
Grind the onions and garlic together into a paste. Put the carrots and potatoes in a bowl of water so they stay fresh until needed.
Heat the oil in a pot until hot. Fry the ground onion and garlic with the ginger and cinnamon until the onions turn brown and smell fragrant.
Add the marinated beef and fry until the meat changes color on the outside.
Pour in the water and simmer until the beef is tender, stirring now and then so it does not stick to the pot. If the gravy gets too thick, add a little more water and adjust the seasoning.
Add the carrots and cook for 5 minutes, then add the potatoes and cook until they are soft.
Stir in the tomato. If you like, add thick slices of tinned Spam or chicken hot dogs at this point.
Scatter the coriander leaves over the stew and serve.
