Bliny (Russian Yeast Pancakes)

Bliny are small Russian pancakes made with a yeasted batter, and they are traditionally served with sour cream, jam or caviar. The yeast is what sets them apart, since the batter rises twice and gives a light, slightly tangy pancake rather than a flat one. A whipped egg white folded in near the end adds more lift. You know each one is ready to flip when its edges curl away from the pan.

Instructions

Dissolve the yeast in 3 cups of the warm milk. Stir in half of the sugar, the salt and the melted butter. The source also mentions an egg yolk in this step, although the ingredient list names only the egg white, so check which you intend to use.

Stir in half of the flour and knead until you have a dough. Cover the bowl with a cloth or towel and leave it somewhere warm for 1.5 to 2 hours, until the dough has doubled in volume.

Warm the remaining milk to 122°F and mix it into the risen dough, along with the rest of the flour and sugar. Whip the egg white well and fold it in.

Knead the dough again and leave it until it has risen once more.

Heat a frying pan and brush it with oil. Pour a ladleful of batter into the center of the pan so it spreads into a circle.

When the underside is done, the edges will have lifted away from the pan and curl upwards. Turn the blin over and cook the other side.

Slide the finished blin onto a large plate, then repeat with the remaining batter, oiling the pan as needed.
