Bobotie (South African Minced Meat and Egg)

Bobotie is a South African baked dish of spiced minced beef under a golden egg custard topping. It works a little like a shepherd's pie, with the custard standing in for the potato. The spice mix of curry powder, turmeric, coriander, cumin and cloves is cooked slowly into the meat, and optional dried fruit and almonds add a sweet and sour note. Yellow rice with raisins and a spoonful of chutney finish the plate.

Instructions

Put the minced beef in a heavy pot with the curry powder, turmeric, coriander, cloves, cumin and bay leaf. Add the dried fruit and almonds if you are using them.

Cook the meat slowly over low heat until it is tender and the spices have blended into it.

While the meat cooks, steam the rice with turmeric, raisins and cloves until the grains are tender and evenly yellow.

Spoon the meat mixture into a baking bowl and pour the egg custard over the top.

Bake in the oven until the custard has set and turned brown on top.

Serve the bobotie with the spiced rice and a bowl of fruit chutney on the side.
