Braai (Zambian Barbecue)
Zambian braai is spiced beef on skewers, grilled over a hot fire and shared with a crowd. The marinade is simple: onion, garlic, lemon juice, cumin, coriander, paprika and cayenne, which gives the meat a warm, tangy heat and a good char. Marinating overnight pays off, and the same mix works on chicken, pork or lamb. Serve it the traditional way, alongside nshima and a fresh salad.
Instructions
Put the chopped onion, garlic, oil, lemon juice, paprika, cayenne, cumin, coriander and salt in a large bowl and stir until it forms a loose, even marinade.
Add the beef and toss until every piece is coated. Cover the bowl and refrigerate for at least 1 hour, or overnight if you have the time, so the spices can work into the meat.
If you are using wooden skewers, soak them in water for about 30 minutes so they do not scorch over the fire.
Heat the grill or braai stand to medium-high.
Thread the beef onto the skewers, leaving a little space between the pieces so the heat reaches all sides.
Grill the skewers for about 8 to 10 minutes, turning now and then, until the edges are charred and the beef is cooked to your liking.
Take the skewers off the heat and rest them for a few minutes before serving, with nshima, salads or grilled vegetables if you like.
