Loukoumas (Greek Donuts with Honey)

Loukoumas are Greek fried dough puffs, similar to doughnuts, finished with a generous pour of honey. This version uses evaporated milk in place of fresh, which gives the batter a rich, slightly caramelised flavour, and a long four-hour rest lets the yeast do its work before frying. Dropped by the spoonful into hot oil, the dough turns into golden spheres that soak up the honey and take a dusting of cinnamon well.

Instructions

In a large mixing bowl, combine the flour, salt, evaporated milk, eggs, baking powder, sugar, cinnamon and vanilla.

Stir the yeast into the warm water until it dissolves, then add this mixture to the bowl and stir. The batter should look smooth, like a cake batter.

Cover the bowl and let the batter rest for 4 hours.

Pour about 5 cm of oil into a pot and heat it.

Scoop up a tablespoon of batter and drop it into the oil, rolling it around as it cooks. Fry until each piece is round and golden or brown on all sides.

Lift the fried pieces out of the oil and pour honey over them. Finish with a little more cinnamon, or with sesame seeds if you like.
