Bryndzové Halušky (Slovak Dumplings with Cheese)

Bryndzové halušky is the national dish of Slovakia, and it rests on two plain things: raw grated potato and sheep's milk cheese. The potato goes straight into the dough, so the dumplings are soft and tender with a real potato flavor. Bryndze is sharper than the mild goat cheese spread sold in many US stores, and it melts into the hot dumplings as a tangy sauce. Smoky bacon finishes the plate.
Instructions
Mix the finely grated raw potatoes with the flour and a little salt if you want it, until you have a thick dough.
Shape the dough into small cylindrical pieces, each less than 3 cm in size.
Drop the dumplings into a pot of boiling salted water. When they float to the surface, lift one out and check that it is cooked through.
Lift the dumplings out with a slotted spoon and put them on a warmed plate.
Scatter the bryndze over the dumplings straight away and let it melt in the heat. Stir it through if you like.
Top with the cooked bacon pieces and serve while still very hot.
