Buckeyes

Buckeyes are peanut butter balls dipped in chocolate, named for the glossy brown nut of the Buckeye tree. The trick is the finish: you dip each ball by a toothpick and leave a small circle of filling bare at the top, which gives the candy its nut-and-eye look. The filling needs only four ingredients and no baking, so they are an easy project for a kitchen with children.
Instructions
Stir the peanut butter, melted butter, vanilla and powdered sugar together in a bowl until you have a thick, evenly mixed dough.
Roll the dough into balls about 1 inch across. Push a toothpick into each ball so you have a handle for dipping.
Chill the balls in the refrigerator or freezer for an hour, so they are firm enough to hold their shape in warm chocolate.
Melt the chocolate chips in a double boiler, stirring until smooth.
Hold each ball by its toothpick and dip it into the chocolate, leaving a small circle of peanut butter showing at the top so it looks like a buckeye nut.
Set the dipped balls on wax paper and pull out the toothpicks. Return them to the refrigerator or freezer until the chocolate has set.
