Smoking Shrimp Creole is a quick tomato-based shrimp skillet that gets its heat and depth from ground chipotle chili. The chipotle adds a smoky warmth that suits the sweet tomatoes and peppers, and you can add as little or as much as you like. The sauce is simmered until thick before the shrimp go in, so they cook briefly and stay tender. Serving it over nutty brown rice makes a full meal in about an hour.

Instructions

Heat the oil in a medium skillet over medium-high heat.

Add the onion, celery, green pepper and garlic and sauté until the onion turns translucent, about 4 to 5 minutes.

Stir in the crushed tomatoes, bay leaves, paprika and chipotle chili.

Simmer the sauce uncovered until it is thick, 15 to 20 minutes, stirring it two or three times along the way.

Add the shrimp and cook uncovered until they turn pink and feel firm, 5 to 7 minutes depending on their size.

Season with salt and black pepper to taste, then spoon over the cooked brown rice to serve.
