Bunny Chow (South African Bread with Salad Dish)
Bunny chow is a Durban street food that serves curry inside a hollowed loaf of white bread. The loaf works as both bowl and side, so the bread soaks up the spiced tomato sauce as you eat and there is nothing to wash up. The meat simmers for 40 minutes until tender, and the same method works in a smaller portion, the quarter loaf known as skhambane.
Instructions
Warm some vegetable oil in a pan and cook the onion until it turns translucent.
Stir in the curry powder and the tomato. Keep stirring until the tomato breaks down and the mixture turns into a sauce.
Add the meat to the sauce, along with the ginger and curry leaves. Let it cook for 40 minutes, until the meat is tender.
Hollow out the bread and spoon the hot curry mixture into the cavity. Serve straight away.
