Burrito Mix
A one-pan burrito filling that cooks the rice right in the pot with the meat, beans, corn and tomatoes. Instant rice soaks up the salsa and canned tomato juices, so the mix comes out moist and holds together in a tortilla. Instructions
Put the meat and the diced onion in a saucepan over medium heat. Cook, breaking the meat up as it goes, until no pink remains and the onion has softened.
Add the rinsed black beans, the corn with its juice, the diced tomatoes, the salsa, the instant rice, the water and the taco seasoning. Stir everything together so the seasoning dissolves into the liquid.
Let the mixture simmer until the rice is tender and has absorbed most of the liquid, so the filling is moist but not soupy.
Spoon the mix into tortillas and roll them up into burritos.
