Igbouh Ahi (Nigerian Roasted Bambara Nuts)

Igbouh ahi is a crunchy roasted snack from the Tiv people of Nigeria, made with just three ingredients. Bambara nuts are rinsed, salted, and coated in blended pepper before roasting, so the heat clings to every nut. The method is simple enough to cook without a recipe card once you have tried it. Serve the nuts alongside plantain or roasted maize for a plain, filling plate built around nuts, salt, and chili heat.
Instructions
Rinse the bambara nuts well and drain them. Sprinkle them with salt, adding as much as suits your taste.
Stir the blended pepper through the salted nuts until every nut is coated.
