Carrot jam is a simple Danish preserve made from just four ingredients. Carrots are naturally sweet, so they take well to sugar, and the juice of four lemons gives the finished jam a sharp edge that keeps it from tasting flat. Finely grating the carrots means they soften quickly in a small amount of water. Spread it on bread or serve it with cheese.

Instructions

Put the grated carrots and the water in a large pot and bring to the boil. Cook until the carrots are tender when pressed with a spoon.

Stir in the lemon juice and the sugar. Keep the pot boiling for another 15 to 20 minutes, stirring now and then so the jam does not catch on the bottom.
