Ashkenazi charoset is the apple and walnut version of the sweet paste that sits on the Passover seder plate. This one uses chopped MacIntosh apples, finely chopped walnuts, a little sweet red wine and honey, with cinnamon for warmth. The soft apples and crunchy nuts make a rough, spoonable mixture. Leaving it in the refrigerator overnight lets the flavors meld, and it takes almost no effort.

Instructions

Peel and core the apples, then chop them into small pieces. Chop the walnuts finely.

Combine the apples, walnuts, sweet red wine, cinnamon and honey in a bowl and stir until everything is evenly coated.

Cover the bowl and refrigerate it overnight, which gives the flavors time to blend.

Taste the chilled charoset and adjust the seasoning if it needs it.

Serve it with matzoh, or simply eat it with a spoon. For a family seder, triple the quantities.
