Cheese Egg Toast

Cheese egg toast is a quick pan-fried sandwich that turns four slices of bread, two slices of cheese and two eggs into a hot snack in about 15 minutes. The egg coating works like a French toast batter, crisping in butter to a golden shell while the cheese inside softens. Seasoning the egg and the cheese layer separately means pepper shows up in every bite. It needs no special equipment, only a bowl and a pan.
Instructions
Beat the eggs in a bowl until the yolks and whites are fully combined, then mix in salt and pepper to taste.
Lay a cheese slice on one slice of bread and sprinkle pepper over it. Top with a second slice of bread and cut the sandwich in half diagonally. Repeat with the remaining cheese and bread.
Melt butter in a pan over medium heat.
Dip each cut sandwich in the beaten egg so it is coated, then place it in the pan. Fry, flipping partway through, until both sides are golden brown.
Serve immediately while the cheese is still soft.
