Cherries Jubilee
Cherries Jubilee is a flambéed cherry dessert that finishes in a single skillet in about ten minutes. Legend ties it to Queen Victoria's Jubilee, and it has long been a dining-room showpiece. Here the cherries are sugared with cinnamon and allspice, browned in butter, then lit with dark rum and orange zest. The flames burn off the raw alcohol and leave a warm, spiced syrup for ice cream.
Instructions
Toss the drained cherries with the sugar, cinnamon and allspice in a bowl, then leave them to sit while you heat the pan.
Melt the butter in a large skillet over medium heat. Add the spiced cherries and sauté for 4 to 5 minutes, until they are slightly browned.
Stir the orange zest into the rum, then pour the mixture over the cherries. Keep your face and sleeves back, and light the rum with a long firestick.
Shake the pan gently until the flames die out on their own. Spoon the warm cherries and their syrup over ice cream and serve right away.
