Cherry Delight

Cherry Delight is a no-bake style icebox pie with a buttery graham crust, a light cream cheese filling and a layer of cherry pie filling on top. The only oven work is an 8 minute bake for the crust. Folding whipped topping into sweetened cream cheese gives a filling that is soft but holds a clean slice. A can of cherries keeps it easy for potlucks and holidays.

Instructions

Stir the graham cracker crumbs, sugar and melted margarine together in a bowl until the crumbs are evenly moist. Press the mixture firmly into the bottom and up the sides of a large pyrex pie dish.

Bake the crust for 8 minutes at 325°F (160°C). Set it aside and let it cool completely before filling, or the filling will melt.

Beat the cream cheese with the powdered sugar until the mixture is smooth and free of lumps.

Prepare the whipped topping following the package directions if it needs it. Gently fold it into the cream cheese mixture until no streaks remain, keeping as much air in it as you can.

Spoon the filling into the cooled crust and smooth the top with the back of a spoon. Spread the cherry pie filling over the surface to finish.
