Chess Pie

Chess pie is a Southern American dessert built from almost nothing: sugar, eggs, butter and a store-bought crust. The spoonful of vinegar is the clever part, cutting through the sweetness so the custard tastes rich rather than cloying. Boiling the sugar and butter first gives a smooth, glossy filling that sets as it bakes. It takes little effort, and the cooling time is the only real wait.
Instructions
Heat the oven to 375°F (190°C) so it is ready when the filling is.
Put the sugar, butter and vinegar in a saucepan and bring the mixture to a boil.
In a separate bowl, beat the eggs until they are evenly mixed.
Whisk the hot sugar mixture into the eggs a little at a time, stirring constantly as you pour. Stir in the vanilla once everything is combined.
Pour the filling into the pie crust.
Bake the pie at 375°F (190°C) for 35 minutes.
Let the pie cool before slicing, so the filling has time to set.
