Gin Fried Rice
Gin Fried Rice is a fried rice finished with a splash of flaming gin, which makes it a good dish to cook in front of guests. The spirit is lit off the heat and then cooked down until the alcohol smell is gone, leaving a faint botanical edge against soy, butter and plenty of garlic. Day-old rice keeps the grains separate, and shredded chicken and egg make it a full meal.
Instructions
Melt the butter in a large straight-sided sauté pan over heat.
Add everything except the gin: the rice, chopped eggs, shredded chicken, soy sauce, garlic, red pepper flakes, and salt and pepper. Stir and cook until all of it is heated through.
Take the pan off the heat and pour in the gin. Carefully ignite it, keeping your face and sleeves well back from the flame.
Put the pan back on the heat once the flames die down. Keep cooking until you can no longer smell alcohol.
Serve the rice warm.
