Chicken and Andouille Sausage Gumbo

Instructions
Heat a small amount of the oil in a large pan and brown the outside of the chicken breasts. Set them aside; they do not need to be cooked through yet.

Stir the chopped peppers, onion and celery into the roux. Cook them until they have softened.
