Chicken Parmesan
Chicken Parmesan is a baked dish of breaded chicken under tomato sauce and melted mozzarella, built mostly from pantry staples. Flattening the breasts to half an inch means they cook evenly, and browning them in olive oil before baking sets the crumb coating so it holds up under the sauce. Use a jar of sauce for speed or make your own. Spoon it over pasta, or tuck a piece into a roll.
Instructions
Heat the oven to 350°F (175°C). In a mixing bowl, stir together the bread crumbs, salt, black pepper and half of the Parmesan. Beat the eggs in a small bowl.
Warm olive oil in a large frying pan over medium-high heat. Dip each flattened chicken breast in the flour, then the beaten egg, then the bread crumb mixture, pressing so the coating covers the meat completely.
Fry the breasts in the hot oil until browned on both sides. They do not need to cook through at this stage. The coating should be set and stay attached to the chicken when you lift it.
Pour half of the sauce into a shallow baking dish and lay the browned chicken on top. Spoon the remaining sauce over the chicken, then scatter the rest of the Parmesan on top.
Bake for 30 minutes. Take the dish out and lay a slice of mozzarella on each piece of chicken.
Return the dish to the oven for 10 more minutes, until the mozzarella has melted. Serve with pasta.
