Chikwanda is a Zambian stew that builds a savory, spiced sauce around the natural sweetness of sweet potatoes. The base is simple: onion, garlic and tomato cooked down, then cumin, cayenne and turmeric bloomed in the pot before the vegetables go in. The sweet potatoes soften into the broth and thicken it slightly. Add the optional hot pepper if you want the sweetness balanced with real heat.

Instructions

Warm the vegetable oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is soft and translucent.

Stir in the tomato and the hot pepper, if you are using it. Cook until the tomato has softened and started to break down.

Add the cumin, cayenne and turmeric and stir until the vegetables are evenly coated with the spices.

Add the sweet potatoes and carrot and stir well so they pick up the spiced base. Pour in the broth or water until the vegetables are mostly covered.

Bring the pot to a gentle simmer, then cover with a lid. Cook for about 20 to 25 minutes, stirring now and then, until the sweet potatoes and carrot are tender all the way through.

Season with salt to taste. Take the pot off the heat and let the stew rest for a few minutes before serving.
