A chip butty is a British sandwich of hot chips between buttered bread, and it takes about four minutes to put together. The method is what makes it work: lay the chips in a tight herringbone so every bite is full, then press the sandwich flat with your palm. Soft white bread and salty butter do the rest. Use well-drained chips so the bread stays intact.

Instructions

Check that the chips are not too greasy and drain them well, so they do not turn the bread soggy.

Take two slices of bread, using the heel if you can, since it holds up best. Butter one side of each slice.

If you are using sauce, spread ketchup or brown sauce evenly over the buttered sides.

Lay the chips on one slice in a herringbone pattern, like floor tiling, keeping gaps to a minimum. You can build up more than one layer.

Place the second slice on top, buttered side down. Set the sandwich on a flat surface and slap it firmly several times with an open hand to crush the filling together. Eat it straight away.
