Easy Nachos is a tray of crisp tortilla chips under melted cheddar, ready in the time it takes the oven to heat. The recipe uses a full pound of grated cheese tossed with chopped green chiles and onion before it goes on the chips, so every bite gets some of the topping rather than just the top layer. Both extras are optional, and the short bake keeps the chips crunchy.

Instructions

Heat the oven to 400°F (200°C). Spread the tortilla chips over a cookie sheet in a single layer so each one can pick up some topping.

In a bowl, toss the grated cheddar with the chopped green chiles and onion, if you are using them, until the pieces are evenly mixed.

Scatter the cheese mixture over the chips, covering as many of them as you can.

Bake for about 2 minutes, until the cheese has melted. Keep an eye on the tray, since the chips can scorch quickly at this temperature.

Serve straight away while the cheese is hot and soft.
