Chipotle Lime Hot Wings are fried wingettes tossed in a sauce of smoky hot sauce, melted butter, fresh lime juice and raw garlic. The butter softens the heat of the chipotle, while the lime keeps the coating sharp enough to cut through the fried skin. Draining the wings on a rack instead of paper keeps the underside crisp until the toss. The sauce comes together in one bowl while the wings fry.

Instructions

Pour enough oil into a deep fryer or heavy pot for deep frying and heat it to 350°F. While it heats, season the wingettes all over with kosher salt and black pepper.

Fry the wingettes in batches for 12 minutes each, so the oil stays hot and the wings do not crowd. Lift them out and set them on a cooling rack to drain.

In a bowl big enough to hold all the wings, stir together the chipotle hot sauce, melted butter, lime juice and minced garlic.

Add the drained wingettes to the bowl and toss until every piece is coated in the sauce. Serve right away.
