Chipotle Lime Tortilla Chips
Chipotle lime tortilla chips are made by soaking corn tortilla wedges in lime juice, salt and chipotle hot sauce before frying. The long soak seasons each wedge through rather than just dusting the surface, so the smoky heat and sharp citrus carry into every bite. Homemade chips also stay whole in the bowl, unlike many store-bought bags that arrive crushed. Serve them with salsa, guacamole or on their own.
Instructions
Stir the hot sauce, salt and lime juice together in a large dish until the salt is mixed in. Cut each tortilla into 10 wedges if you have not already.
Add the tortilla wedges to the dish and turn them so they are coated. Leave them to soak for 2 hours.
Lift the wedges out and spread them on a cooling rack. Let them dry for 2 hours, so they hit the oil without much surface moisture.
Heat the oil for deep-frying to 375°F. Fry the wedges until they float and are lightly browned around the edges.
Lift the chips out and drain them on a cooling rack set over a baking pan. Serve them once drained.
