Glorified Mac and Cheese

Glorified Mac and Cheese turns a side dish into a full dinner by folding sliced hot dogs and frozen green vegetables straight into the cheese sauce. The base is a simple roux of butter, flour and milk, so you can use whatever cheese is in the fridge, from cheddar to gruyère. A layer of sliced tomato, Parmesan and paprika bakes into a savory top. The notes also suggest swaps such as chicken, tuna or chickpeas.
Instructions
Heat the oven to 180°C (350°F) and grease a casserole or baking dish.
Bring 2 liters (2 quarts) of salted water to a boil on the stovetop. Add the macaroni and cook for about 9 minutes, until it is al dente.
While the pasta cooks, make a roux. Stir the flour and butter together in a saucepan over low heat until the mixture is smooth and bubbling.
Pour in the milk, then season with salt and pepper. Stir until the sauce thickens.
Turn the heat to its lowest setting and stir in the shredded cheese, sliced hot dogs and frozen vegetables.
Drain the macaroni and tip it into the greased dish. Pour the sauce over the pasta and stir until everything is evenly coated.
Lay the tomato slices over the top, then sprinkle with grated Parmesan and paprika.
Bake for 40 minutes.
