Chips, cheese and gravy is a staple takeaway order on the Isle of Man, and it is easy to make at home. Baking the chips with cheddar melted over the top means no deep fryer is needed. The gravy is a simple butter and flour roux loosened with beef broth and black pepper, so it comes out savory, peppery and thick enough to pool over the cheese.

Instructions

Heat the oven to 220°C. Spread the chips on a baking tray that has been brushed with vegetable oil, and season them with salt.

Bake the chips for 15 to 20 minutes, until they are lightly golden.

About 5 minutes into baking, scatter the grated cheddar over the chips and return the tray to the oven so the cheese melts as they finish cooking.

While the chips bake, melt the butter in a small saucepan over low heat. Stir in the flour and keep stirring so it forms a smooth paste.

Add the beef broth a little at a time, stirring constantly, then add the black pepper. Keep the heat low and continue until the gravy is smooth and thickened.

Divide the cheesy chips between plates and spoon the gravy over as generously as you like.
