Chocolate Balls
Chocolate balls are a no-bake peanut butter sweet that goes from bowl to plate in about ten minutes. Puffed rice cereal and chopped nuts give the soft peanut butter and coconut centre a crisp, crunchy bite, and a thin shell of semi-sweet chocolate balances the sugar. Chilling the balls before dipping keeps them firm, so the coating goes on cleanly. They suit a cookie tin or a party plate.
Instructions
Melt the semi-sweet chocolate chips in a double boiler until smooth, then take the pan off the heat.
Put the peanut butter, puffed rice cereal, melted butter, chopped nuts, vanilla, icing sugar and fine coconut into a bowl. Mix until the ingredients are evenly combined and the mixture holds together.
Shape the mixture into small balls, each about half the size of a golf ball.
If you like, chill or freeze the balls for a while first. Firm balls are easier to dip and are less likely to fall apart in the chocolate.
Dip each ball into the melted chocolate until coated, then set it on wax paper.
Let the coated balls cool in the fridge or freezer until the chocolate has set hard, then they are ready to eat.
