Chocolate Icing
This chocolate icing needs only three ingredients and about half an hour, and it makes enough to cover one cake. Sweet chocolate melted gently over hot water gives a smooth base, and a splash of cream keeps it supple. Beating in sifted sugar bit by bit lets you stop at exactly the thickness you want, so the icing spreads cleanly without tearing the cake's surface.
Instructions
Set a heatproof bowl over a pan of hot water and melt the chocolate in it, stirring now and then until it is smooth and free of lumps.
Pour in the cream and stir until it is fully blended into the melted chocolate and the mixture looks glossy.
Beat in the sifted confectioner's sugar a little at a time. Stop adding sugar when the icing is creamy and thick enough to spread easily over a cake.
