Pedernales River Chili
Pedernales River Chili is the chili con carne Lyndon Johnson liked best, named for the river near his Texas Hill Country ranch. It leaves out the usual beef suet, which his doctors ruled out after his heart attack, and adds tomatoes and onion instead. Johnson preferred lean local venison when he could get it. The White House received so many requests that Lady Bird Johnson had the recipe printed on cards to mail out.
Instructions
Put the coarse-ground meat, chopped onion and garlic in a large skillet. Cook them together, breaking up the meat, until the meat has lost its raw color and is browned.
Add the oregano, cumin, chili powder, whole tomatoes with their juice, salt and hot water. Stir well and bring the pot to a boil.
Turn the heat down, cover the pan and let the chili simmer for about an hour. Taste near the end and add more chili powder or salt if you want it stronger.
Skim the grease from the surface before serving.
