Chocolate Macaroons (No-Bake)
Chocolate macaroons are a no-bake cookie that goes from pantry staples to finished tray in about 15 to 20 minutes. A cocoa and sugar base cooked gently over a double boiler is stirred into oats and coconut, so the chocolate never scorches and no oven is needed. The recipe makes 20 cookies, and the one thing to watch is the heat, since overcooking leaves them crumbly.
Instructions
Set the bottom half of a double boiler on the stove to heat. Place a large metal mixing bowl on top and melt the margarine or butter in it.
Add the white sugar and whisk until it has dissolved. Whisk in the milk until the mixture is smooth.
Break up any lumps in the cocoa, then whisk it in. Take the bowl off the heat and carry it to your work area.
Using a rubber spatula, mix in the coconut and oatmeal thoroughly. There should be no dry patches left in the mixture.
Portion the mixture onto a pan and leave it to set. If the finished cookies are crumbly, the mixture was overcooked.
