Chocolate Pear Bake
This chocolate pear bake looks like a brownie but contains no flour at all. Whipped egg whites do the work of holding it up, which keeps the texture light and slightly springy instead of dense. Sliced pears add a mild fruit note that softens the semisweet chocolate without competing with it. Serve it hot with lightly whipped cream. Peaches, apples or orange segments can stand in for the pears.
Instructions
Grease a 9 x 9-inch (22 x 22 cm) baking dish and heat the oven to 325°F (170°C).
Melt the chocolate and butter or margarine together in a double boiler. Take the pan off the heat as soon as everything is smooth.
Whisk the egg yolks with the sugar until the mixture is thick and pale yellow.
In a separate bowl, whisk the egg whites until they hold firm peaks.
Stir the melted chocolate into the egg yolk mixture until fully combined.
Gently fold in about a third of the egg whites to loosen the batter, then fold in the rest without pressing out the air.
Add the sliced pears and stir just once or twice. Pour the mixture into the prepared dish.
Bake for 35 to 40 minutes, until the bake feels springy yet firm when touched. Serve hot with lightly whipped cream.
