Chocolate Sandesh
Chocolate sandesh is a quick, no-cook take on the classic Bengali milk sweet, built on fresh paneer. Here the curd is mashed with cocoa, a little cream and vanilla, then rolled into small balls. A sugar substitute and low-fat paneer keep it light, while the cream gives the texture some softness. There is no stove involved, and most of the time is simply chilling, so it suits making ahead.
Instructions
Put the paneer and the sugar substitute in a bowl. Mash them together well until the sweetener is evenly worked through and the paneer looks smooth.
Add the cream, cocoa powder and vanilla essence. Mix thoroughly until the mixture is a uniform brown with no streaks of white or pockets of dry cocoa.
Divide the mixture into 8 equal portions. Roll each portion between your palms into a ball.
Chill the balls in the refrigerator for at least 1 hour, then serve cold.
