Chuck Wagon Beans
Chuck wagon beans pair bacon and ground chuck with canned pork and beans for a pot that feeds eight. The sauce gets its depth from three kinds of sweetness: brown sugar, white sugar and molasses, balanced by mustard, barbecue sauce and chili powder. Everything is browned in one pot, stirred together and baked until thick. It suits camping trips and potlucks, and corn bread is the natural partner.
Instructions
Cut the bacon into bite-sized pieces and put it in a large, ovenproof pot or deep skillet with the ground chuck and chopped onion. Cook over medium heat, breaking up the beef as it goes, until the meat is browned and the onion has softened.
Stir in the garlic, both sugars, the molasses, barbecue sauce, mustard, pepper, salt and chili powder, adding them in that order. Mix well after each addition so the seasonings are evenly spread through the meat.
Add the canned pork and beans last and stir until everything is combined. Transfer to a baking dish if your pot is not ovenproof.
Bake at 350°F for about 40 minutes, until the sauce has thickened and clings to the beans. Serve hot, with corn bread alongside.
