Coquitos (Coconut Macaroons)
Coquitos are coconut macaroons built from just five ingredients, with no flour and no butter. Whole eggs and sugar bind the desiccated coconut into a thick paste, which you pipe onto parchment instead of shaping by hand, so the cookies come out uniform. The recipe leaves the water optional because egg size varies, so you add it a spoonful at a time until the paste pipes cleanly.
Instructions
Preheat the oven to 180°C and line a baking sheet with parchment paper.
Put the eggs, desiccated coconut, white sugar and vanilla extract in a bowl and mix until you have a wet, even paste.
Check whether the paste is loose enough to pass through a large piping tip. If it is too thick, stir in the water one tablespoon at a time until it pipes easily. With extra large eggs you may not need any water.
Pipe small dollops of the mixture onto the lined baking sheet, leaving a little space between each one.
Bake in a medium to hot oven for about 30 minutes, until the coconuts are done and set. Let them cool on the sheet before lifting them off.
