Cornish Fairing

Cornish fairings are small, crisp spiced biscuits from the southwest of England, and this version takes only eight ingredients and one bowl. Ginger, cinnamon and mixed spice give them a warm, peppery bite, while a little golden syrup adds a deep sweetness and helps the dough bind. You roll the dough into walnut-sized balls and let the oven spread them, so there is no cutter or rolling pin to wash.

Instructions

Heat the oven to 180°C (350°F or Gas Mark 4).

Sift the flour into a mixing bowl. Rub the butter into the flour with your fingertips until the mixture looks like fine crumbs.

Sift in the caster sugar, baking powder, ginger, mixed spice and cinnamon. Mix well so the spices are spread evenly through the crumbs.

Add the golden syrup and stir until the mixture comes together into a dough.

Roll pieces of the dough between your palms into balls about the size of a walnut. Set them on a baking tray, leaving a little space between each one.

Bake for 15 minutes. Let the fairings cool for a few minutes on a cooling rack before serving.
